Make a meatless delicious meatless taco filling with
potatoes (or Papas).
Ingredients to serve 4:
2 medium potatoes, peeled or not, it’s up to you, and diced
into ½-inch cubes
1 medium onion, sliced about 1/8-inch thick
Salsa (any type will do)
1 tbsp vegetable oil
Handful of Cilantro, chopped
Taco shells or Tortillas
Heat oil in a heavy skillet over medium-high heat (cast iron
is best, but any kind will do)
Add onions and potatoes to skillet and cover partially with lid
DO NOT STIR.
You want to let them stick so that they will get all nice and
caramelized.
After 10 min, check to see if potatoes and onions are
golden-brown on bottom. Once
potatoes and onions are golden-brown on bottom, turn with spatula (the kind you
use to turn over pancakes) and cover again and let cook for another 5 min.
Once potatoes and onions are golden-brown all
over, add salsa. (Be careful
adding salsa to hot pan as it may splatter, you may choose to remove from heat
and let cool a few minutes before you add)
Stir on medium until salsa reduces and potatoes become
coated in salsa and are just starting to break down.
Sprinkle cilantro over mixture and stir once or twice just
to mix through
Serve in taco shells or tortillas.
