Jillien's Tostada Bar

My family will be gone most of the day at youth sporting events and I needed to put together a meal that will sound good when we get home and be way more healthy than just "driving through" because it is quick and nobody (read: me) wants to cook after being gone all day. 

Here is a meal that we do quite often on weekends because it’s easy and it offers the flexibility of feeding a small or large group of people; I will leave this morning with 1 husband and 3 kids but may come home with 6 kids and maybe even 2 more sets of parents.

So, what are we having?  Tostada Bar! Easy, yummy and fun!

Before leaving this morning:
I browned 1 pound of ground beef and seasoned it with garlic salt and pepper
I browned 1 pound of ground turkey also seasoning it with garlic salt and pepper
I took 4 chicken breasts out of the freezer so they will thaw and be ready for grilling when we get home.
I diced 2 tomatoes, 1 onion, a bunch of cilantro, shredded some lettuce, grated some cheese and stored them (separately) in the fridge in ziploc containers. (I buy the lunch meat that comes in those great reusable containers and these are the perfect size to store and serve the toppings.)

I also have a jar of salsa and some sour cream ready to go.  (Many times we make our own salsa using jalapenos, tomatillos, tomatoes, onions, and cilantro but today we are going to use Pace Picante sauce).

Now when I get home tonight all I have to do is:
Re-heat the meats
Heat a can of refried beans (hint, put a little olive oil in the pan and the beans won’t stick)
Grill the chicken on the bbq
Put out the toppings
Put out tostada shells, taco shells, warmed tortillas and tortilla chips so depending on one's mood they can create whatever they want - tostadas, soft tacos, burritos or nachos. 

If I have any leftovers we may do another Tostada bar tomorrow or maybe we’ll make breakfast burritos in the morning. 

I hope you try this at your house because as I said it can feed a few or quite a lot of people and it is pretty healthy, very easy, super fun, and not expensive at all. 

Tostada bar is also great for parties - we did it for Super Bowl Sunday for 30 people and it was a Big Hit!
