Me and my friends love Girls Night In. We send our husbands and kids out to one house to hang out (they all get along) and "we-girls" go to one or the others' houses for the evening. We eat, drink, talk, play games, listen to music, gossip, sometimes swim and or hang in the jacuzzi. In other words- we just relax and celebrate and or complain about the week, the weekend, our lives, our kids, our spouses etc...
We will choose a theme for the evening and have people bring something to compliment that theme. I am hosting this weekend and my theme is Mexican.
I will be having my "Tostada Bar" that I have already shared with YOU ALL as well as my Mango Salsa and Sangria..
Mango Salsa (Serves 8)
2 Mangoes Diced
1 Papaya Diced
1 cucumber diced
1 onion diced
1 bunch of cilantro cut in small pieces
1 lime squeezed into the mix
A Splash of Olive Oil
Mix it all together and serve with tortilla chips
Yummy Sangria- we have been told by the biggest drink snobs that we make the best Sangria and we do. Here is the recipe for the Red Sangria. (It serves 8 people and very inexpensive to make)
You will need 2 bottles of inexpensive red wine (We use Charles Shaw from Trader Joe's.)
Add in 1/3 of a liter of Orange Crush
Add in 2 cups of orange juice
Add in 2 cups of vodka or gin
Add in lots of diced up oranges, grapes and apples. (I normally do 6 oranges, 6 apples and a bunch of grapes
I also always have extra cut up fruit for those who want to add more into their drinks.
